0 Rising Methods

Your bread will rise if in a warm 80-85 degree place if it is free from drafts. Lightly spray the top of your dough and place some plastic wrap on top. I tried to raise some bread in a sunny window....big mistake! It did not rise at all...I think I killed it. There are two alternatives:

1) Place the covered dough in an unheated oven on a top rack. On the rack below, place a pan of hot tap water and close. Use your oven light to check the progress of your dough.

2) If you have a convection oven, check your user's manual to see if you have a bread proofing setting. When I use this setting, I get 100 degrees and a circulating fan, so no warm water bowl is necessary.
