7 Cinco de Mayo! and Awards!

Hooray for Cinco de Mayo! My family just LOVES Mexican food, and I am here to share my faves...

Chips and Salsa...so easy and so fast! Just dump and blend!







Chicken Enchiladas, Ole!

I have tried both red and white sauces....

my family prefers the red sauce. It is NOT hard to make...

throw it in a blender and thicken....so good!


Here is the rice....Spanish rice...Mexican rice...I'm not sure which is politically correct.

Doesn't matter, it tastes great! I believe rice should be simple and not detract from the main course. Therefore, no chunks of pepper, corn, or all that pizzazz for me!




Or, you can make tacquitos. These are baked and are great as an appetizer or main dish.









If you want a fast and easy all-in-one dish, you can make either

    3. I made your red enchilada sauce yesterday. I used shredded pork instead of chicken in my enchiladas. I also made the Spanish rice. I've been wanting a good recipe for the rice. I just don't like the boxes of Spanish rice from the grocery store. Yours was so good! It was just right...like you, we believe rice should be simple. My husband and I loved both recipes. Thank you!!
