9 Peanut Butter Pancakes



There is a group of Utah bloggers that Holly and Lindsey have put together on a site called The Hive. I love being part of a local group of tested and tried recipes that work in our neck of the *ahem* mountains.


It was on that site that I found Rookie Cookie and her soon-to-be-very-famous Peanut Butter Pancakes.


I looooooove peanut butter. These pancakes are light, moist and have just the right amount of peanut butter to satisfy any peanut butter lover.






My husband has always slathered peanut butter on his pancakes and drenched them in maple syrup.

I didn't get it.

Until now.

Peanut Butter Pancakes

1 1/4 cups flour
3 Tbsp sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 1/4 cup milk
1/3 cup peanut butter
1 egg
3 Tbsp melted butter

Heat a griddle or heavy skillet over medium heat.

In a medium bowl, combine the flour, sugar, baking powder and salt
Whisk to combine. In a large bowl, combine the milk, peanut butter and egg.
Whisk until smooth. Combine the flour mixture with the milk mixture and gently stir until just combined. 
Fold in the melted butter.

Spray non-stick spray on the heated griddle. For each pancake, pour 1/2 cup batter onto griddle. 
Cook until golden brown, turn when the edges are slightly dry.

Yields 8 pancakes.

  2. Huh, I've never tried peanut butter on (or in) my pancakes...it does sound oddly tempting ;) I bet it'd be good combined w/ banana, too! Yes, must make them!

  5. I make an incredible (if I do say so myself) peanut butter cake, but I haven't been so adventurous in trying other things. I'd probably like pancakes if they were PB pancakes! Hello Saturday morning breakfast!

  7. A roommate my freshman year would mix PB & maple syrup in a bowl and eat it for a snack. Apparently she's not the only one who likes that combination. PB was spread on pancakes at my house growing up as well. Sounds good.
