2 Japanese Ramen Salad











Fool me once.....HOORAY for you!

I tell ya, looks can be deceiving....I was told that this was a salad.

And it was true.  It IS a salad.  I just didn't know what it was made out of.

If you had told me the ingredients, I would have turned up my nose and said, "Uh- uh.  Nope.  Not on your life."  Why?

I have had an aversion to green foods most of my life.  Not sure where this came from, but I'm also a texture eater.  I think I was around 8 or 9 years old before I ate my first lettuce leaf.  Yep.  An iceberg lettuce leaf.  I would sprinkle salt on it and nibble on it till it was gone.  It probably wasn't until I was in junior high that I discovered the wonderful world of salad dressing....ooooohhhh....

Well, back to this salad.  It is made with cabbage.  In this salad, it looks like plain 'ole regular lettuce.  Tossed in with a salty, tangy dressing with chicken, Ramen noodles and almonds, I immediately fell in love.  You can just imagine the look on my face when I found out that it was cabbage I was eating....


 

You know what else I love about this salad?  It stays crunchy, the next day, unlike regular lettuce leaf salads that go limpy and soggy when stored in the fridge.
If your kids are picky like me, and love Ramen, tell them that this is a Ramen salad.  They don't need to know what it really is.  And they'll like it.  Trust me.

Japanese Ramen Salad
INGREDIENTS
1 T. sugar
½ c. vegetable oil
1 t. salt
½ t. pepper
3 T. vinegar (rice or red wine)
2 c. diced cooked chicken
2 T. slivered almonds
½ head of shredded cabbage
2 green onions, chopped
1 pkg. Ramen, uncooked, broken up
1 pkg. Ramen seasoning
2 T. toasted sesame seeds

INSTRUCTIONS
Combine first 5 ingredients to form a dressing.

Set aside.

Shred cabbage and add rest of ingredients.

Toss with dressing and put into fridge overnight.

  1. I have a similar recipe to yours, called a differnt name and it is one of my families favorites. We toast the ramen noodles and it gives the salad a crunch. So glad you got over your adversion to "green".
