3 Fast Chicken Stuffing Rollups with Homemade Gravy


I got a phone call from my Relief Society president, telling me that my visiting teaching companion just came home from the hospital.  Huh?  I didn't know anything had happened!  "Could you bring her some dinner?  Nothing fancy; it's just her and her husband.  Perhaps you can take over whatever you are making tonight..."

Let's see, what do I have on hand?  I am so glad I have a food storage ~  This is a semi-emergency here! ~  Chicken in the freezer, potato pearls, oh, and stuffing mix.  My son's favorite quick, Sunday meal is what I call chicken stuffing bake; you know, the recipe that's on the box of stuffing?

I vaguely remember seeing a picture of "chicken roll-ups" on the box and did a quick Internet search for the recipe.  The one thing I did not like about the recipe was that you just pour a can of condensed soup on top of the naked chicken....I wanted this to be a nice, elegant dinner and I think I got it figured out...

Of course, if you want to make your own stuffing, go right ahead.  Making homemade stuffing is on my list of things to make from scratch...but in a pinch, the box mix will do.

Water is poured onto the dry stuffing mix...


and I pull out three frozen Costco sized pieces of boneless chicken.  Thaw them half-way...

I could pound out the chicken, but I decide to cut it into 1/4" thin slices.  It is much easier to cut the chicken if it is partially thawed out.  Make sure your hand is completely flat on top of the chicken and your thumb is out of the way....man, this chicken is cold!

Beat an egg slightly and add it to your stuffing mix...stir it all up.

O.k. Get everything in place: Melted butter, crushed cornflakes, stuffing, and chicken.

Put some stuffing on top of the chicken slice.  It helps to pat down the stuffing flat for easier rolling.

Start with the skinny, small, tapered end of the chicken piece and roll it up tightly.

Dip it in the butter.

Dip it in the cornflake mix and put it seam side down on a slightly greased baking sheet. 

Look how many I got out of 3 pieces of chicken! 

While the chicken was baking, I searched my brain on how to make a quick gravy.  Why not use the recipe for the Chicken Pot Pie?  Here we go!

Butter (margarine) and flour are added to the saucepan.  Then chicken broth is added.  I love using McCormick's Chicken Base....sadly, they are not selling it at Costco anymore....

This is all stirred together into a paste.  Thyme and milk are added... turn the heat up, stir till thickened.

Looks like the chicken is done!    Ooooh, I can't wait to see the inside...

This not only made a nice presentation, but tasted great!
This would be a very simple idea for a Valentine's dinner.  What do you think?

    I too miss the McCormicks chicken base. It was such a good price. Maybe a campaign is in order.

  2. This is very nice and would be lovely for Valentine's Day. Now what to feed the "non-chicken and potato and sometimes stuffing" children?

    I use the Better Than Bouillon that Costco does sell. I love it.

This looks easy and delish :) Great idea, and good for those of us who don't always think ahead to defrost the chicken (ahem, not me!:) - I'll give a second vote for the Better than Bouillon from Costco - organic and low sodium - you should try it Frieda, I think it compares well with the MccCormicks :) (yes it is more expensive, but it is organic and low sodium!)
