15 Chocolate Mini Doughnuts!!!


If you ever feel the urge to pick up a tray of Costco chocolate covered doughnuts, let me stop you right here.

You have got to make these.  Today.

But first, you have to have one of these...



You can get them pretty much anywhere off the Net....This one is a Norpro from the Food Network Store for $11.95.

Oh, and while you are at it, you might want to get one of these:



No, it's not a baby bottle....its a Cupcake Pen from Tovolo ~ isn't that a nifty idea?  Let's see if it works!

The cake doughnut batter is mixed up...no exotic ingredients, although I tasted it and it wasn't sweet enough.  I also subbed the milk for buttermilk.  Oh, and whenever you use buttermilk, used baking soda, not baking powder.  Why?  Just because.  No, really.  Um, has something scientific to do with it...



Anyway, this is a pretty thick batter that is scooped up into the bottom of the cupcake pen.





I tapped cupcake pen onto the counter to bring all the batter down and pipe it into the greased doughnut tin...(shortening worked better than spray oil).  Even though the pan says, "non-stick," you'll still need to grease 'em up.

You don't have to use a fancy schmancy cupcake pen.  You could use a cake decorating bag and tip....or even a Ziploc baggie with a corner cut off...  You also don't have to have a fancy doughnut pan, either...you can use a mini-muffin pan.  Just think of them as "doughnut muffins."



Just put enough batter to fill the mold about 2/3 full.  Fill it any more, and you'll miss having the doughnut hole!

I liked the cupcake pen, although it stopped squirting at this point...




The lid probably has a doughnut or two in there....no problem...

I licked it clean.

Shhhhhh.  That'll be our little secret, right?

Bake the mini's for 8-9 minutes.  Touch the tops (like you would a cake) ~ they should be dry and spring back into shape.


Let these cool for about 3 minutes.  This is IMPORTANT....kind of like a bundt cake ~ if you pop these babies out too soon, they'll stick to the pan.  I may have to get another pan.  I needed to wash it and grease it again for the second batch...

Now for another fun part!  The FROSTING!!!  I love this glaze, from Alton Brown.  Watch this:



Cool!!  The glaze sets to touchable finish in 30 minutes.

Can you wait that long?

It just happened to be my visiting teacher's birthday, so I stuck a candle in one of them.

  1. Wow these look good! I'm going to try them sometime soon. Love the tip for donut holes using a mini muffin pan, since I don't have a donut pan.

  4. So my mother-in-law uses a washed-out ketchup bottle (the kind with a neck, not the squeeze kind) instead of a cupcake pen--works the same!

  7. Have you thought about using a cookie/muffin scoop to fill your cupcake pen? Just a tip I learned in PC for filling the Easy Accent Decorator...bet it would work lovely here too.
    Yes, I want to taste these. :)

  14. oh my goodness these donuts look soooo good! My first love is chocolate cake donuts, then lemon filled, then maple glazed, then... you get the idea :)I gotta get one of those pans.

  15. What a fantastic idea and I love the fact they are baked. Donuts have always been given the bad rap due to the frying :( I remember one of my first jobs was frying donuts all night long at a bakery and going home reeking of oil and fumes,good times!
