4 Brio Tuscan Grille Restaurant & National Lasagne Day!


I had the opportunity to try the Brio Tuscan Grille restaurant located in Murray, Utah with several local bloggers.

I was greeted with a beautiful entrance with romantic outside patio seating off to the right.

Are you hungry?

You should be.  The overall group faves were the Bruschetta Quatro, Bistecca Insalata, and I heard raves about the Beef Medallions with Shrimp Scampi and the Lobster with Shrimp Fettuccini. I ordered the Campanelle Carbonara.  It had great flavor, loved the shape of the noodles, although they were a little more al dente than I like.

Dessert?  Definitely the Dolchino Sampler ~ Five different flavors and the one that tasted like butterscotch pudding was the group favorite.

TODAY, July 31, Brio Tuscan Grille of Murray will celebrate National Lasagne day with half priced lasagne for lunch and dinner. Reservations are strongly recommended and can be made by calling 801-262-6500.  

Brio offers catering, online ordering, To Go, a Gluten Free Menu and kid's meals.  Kids can eat free on Tuesdays 4 PM to close with each purchase of an adult entree.  Children can create their own pizza, have a choice of pasta, salmon, chicken or even a cheeseburger.

This is definitely a more upscale restaurant, with food to match.  The lunch menu ranges from $4.95+ for soup or salad, with the entrees ranging from $10.45 - $18.85.  The dinner menu ranges from $13.95 - $28.95.  

Want to try Brio's at a lower price?  Sit at the bar Mon-Fri 3-7 PM & 9 PM to close and try any of their Tuscan Tasters, ten of their most popular dishes priced at $3.95 each, along with $5 drink specials.

Brio Tuscan Grille has great Italian food, a wonderful ambiance, and fabulous service.  Give them a try!

11 Magleby's Copycat Dinner Rolls


Magleby's is a restaurant in Utah that makes these rolls locally famous.  I have not tried these rolls at the restaurant, but there are several people that have made these with the frozen store bought rolls with amazing results.

I made these with my Dinner Roll recipe and they are so good ... light and tender inside, with a cheesey bite from the salty Parmesan on the outside.

After the rolls are shaped, they are dipped in .... get this ...

mayonnaise, melted butter, and a combo of Parmesan cheese, garlic salt and parsley.


The rolls are left to rise before baking.


You will know when these rolls are done by the intoxicating smell coming from your oven...


Eaten alone or with some butter, these simple, yet extra fancy rolls are sure to be a hit with any meal.

21 Baguette Chips from Pillsbury Giveaway

Yes, I'm a snacker and once I got my hands on these, I ripped open the bag and began munching.

I loved the flavor of Cheddar Sundried Tomato more than the Italian Cheese Herb.  The flavors are not overpowering and they don't leave orange dust on your fingers.

They make the perfect croutons for a cold, crisp summer salad.  I like the flat, round shape of these chips over the traditional cubed croutons. You can try them in soup or munch on them alone.

These chips are only 130 calories per 21 chips (which are about the size of a quarter).  50% less fat than traditional potato chips make these a great alternative for snacking.

7 Can't Find It? Harmons to the Rescue!


I needed some red, white and blue sprinkles to decorate some star sugar cookies for a pack meeting tonight.


Where in the world am I going to find these colors after the Fourth of July??

Harmons.

All you need to do is go up to the gal at the Bakery counter and ask.

"Oh, sure ~ we can do that! Do you want the colors all mixed together or separate?"

Together, please.

"It will be $2.99 for 8 oz.  Is that o.k.?"

Sweet!

Harmon's is great for fulfilling special requests. 

When my grapes were ripe and I needed 2 quart bottles STAT.... Harmons gladly sent in a special order and I got my bottles right away, at no extra cost.



I needed a prime rib roast in June.  The prime rib steaks were on sale and not only did Harmons give us a roast at the steak price, they prepped it for easier cutting AND seasoned it, for no extra charge.


I needed 2 T. of sesame seeds to top some hoagie buns.  I couldn't bring myself to pay top dollar for a large bottle of sesame seeds that I wouldn't use, so I asked the sweet gal at the bakery and guess what?


She sold me 2 T. of sesame seeds for twenty-five cents.

4 Canning Your Own Chili


A couple of years ago, I borrowed a pressure canner from a friend and canned as many things as I could.  I canned chicken, potatoes, beef chunks and my own homemade enchilada sauce.

(Post for canning enchilada sauce is coming soon... do not can anything with flour or any type of thickening.  I had to adjust the enchilada sauce recipe for canning.)

If you are new to pressure canning, (also known as the steam pressure method) you may want to read this post to determine the difference between pressure canning and water bath canning.

I can't tell you how nice it is to open a bottle of this chili and be able to spoon it on top of this hot dog.  Quick and easy, it was a fast meal that didn't heat up my kitchen!



This recipe comes from my canning bible:  Ball Blue Book Guide to Preserving.  I made a couple of substitutions based on what I had on hand, but I think this chili turned out great! 

It is a little spicy for me, but my hubby loved it.  You will need to experiment with the spice levels to get the desired heat that you want.

It starts out with 5 pounds of ground beef.  I love to use Costco's 91% lean ground beef.  Brown the meat and drain excess fat.


Add onions and garlic, cooking until tender.  Add canned tomatoes, chili powder, salt, and pepper flakes.  Simmer for 20 minutes.  I used some bottled tomato juice and cooked it down into a sauce.


Ladle hot chili into hot pint jars, leaving 1" headspace.


Remove air bubbles in jar by stirring chili with a plastic knife.  Clean the rim of the jar to ensure a good seal.


Place a simmered lid onto jar and screw the ring finger tip tight.


Put prepared jars into your pressure canner.  What I really like about pressure canners is that you can "stack" the jars.  Make sure you offset the jars, (set the jar over 2 jars) instead of directly on top of the bottom jar.


Following the directions of your pressure canner, add water and process pints at 10 pounds pressure for 1 hour and 15 minutes. (Adjust for your altitude)

I am not sure why, but the Ball Blue Book of Canning does not recommend canning pinto beans with this chili; instead they recommend canning them separately and adding them to the chili when serving.

Again, a great recipe to eat alone in a bread bowl or serve with all beef hot dog, topped with shredded cheddar cheese!
