I LOVE the convenience of disinfecting wipes, and this gal shows you two different recipes, one for your counter tops and one for your cutting boards.  I love the fact that she uses a dedicated cutting board only for her meats.

0 Make Your Own Chicken Rub & Easy Grilled Chicken Tacos!


While cleaning out my kitchen cabinets, I found a bottle labeled "Chicken Rub."

I was SO excited! I had forgotten all about this fantastic recipe ~ one my husband said was a keeper and one that I had to make again.  We loved it so much that we tripled the rub recipe, labeled the container, and...

forgot about it.

Not anymore. I love that this recipe has spices that you may already have in your kitchen.  It uses Ancho Chili Powder , a popular chili powder with mild heat and a sweet, fruity flavor.
This recipe does NOT require any marinating, yet the chicken comes out full of flavor and juicy every time.
Simply sprinkle the rub onto both sides of plain, boneless chicken breasts...


Give it a spritz of oil to keep it sticking onto the grill...I love my MISTO sprayer !

Misto Brushed Aluminum Olive Oil Sprayer

and plop them onto a hot, preheated grill.
I like to cook my boneless chicken for 4-5 minutes each side, turning them 45ยบ each time to give the chicken those ever sought after # grill marks. Total cooking time is only about 16-20 minutes.


Take the chicken off the grill, cover, and let it rest for 5-10 minutes before cutting. You want those juices to get redistributed all throughout the chicken to make it moist and juicy...



Score! I couldn't resist a nibble.  Oh, sooooo good.  

Not only did we put these in our tacos, we tossed them into some Roasted Garlic Fettucine Alfredo. They would also be fantastic in a tossed green salad.

Grilled Chicken Tacos - Chicken Spice Rub
This chicken spice rub uses Ancho chili powder, which is a smokier version and tastes wonderful when used in this rub for grilled chicken. 
Ingredients
  • Chicken Spice Rub Mix
  • 2 Tablespoons Ancho chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons light brown sugar
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 4 boneless, skinless chicken breasts (about 8 ounces each)
  • cooking oil
  • 8 flour tortillas
  • barbequed onions
  • coleslaw
  • guacamole, lettuce, tomatoes, cheese toppings
Instructions
1. In a small bowl, mix together the 5 ingredients for the spice rub. Put spice rub into a small container and label it for storage.2. Heat the grill to high. After a couple of minutes, clean the grill with a wire brush. Reduce heat to medium-high.3. Sprinkle rub on both sides of the chicken breasts.4. Drizzle or spritz oil directly on chicken and place on the grill for about 4-5 minutes.5. Turn the chicken over and cook for an additional 4-5 minutes. Turn the chicken 45°, cook an additional 4-5 minutes on each side, for an overall cook total of 18-20 minutes.6. Remove chicken from the grill, cover with aluminum foil and let rest for 5-10 minutes before slicing.7. Grill the flour tortillas slightly just to mark and heat Build tacos with sliced chicken, onions, coleslaw, guacamole and toppings of your choice.
