0 Low Carb Mashed Cauliflower - Instant Pot Pressure Cook


Creamy mashed cauliflower is a great alternative to mashed potatoes for a low carb option. This recipe gets its fabulous flavor from low sodium chicken broth, salt and pepper, but you can use water and any seasonings of your choice.

I love using a pressure cooker to make this recipe - simply put the whole head of cauliflower into your cooker, cook, break apart the florets, and mash... right in the pot. Cooking the whole head vs individual florets made for a better, uniform cooked consistency and texture. Even large, individual florets can be overcooked with a short, zero or 1 minute cook time.

Easy, right?

Cut the base off the bottom and trim any leaves. Don't worry about cutting out the core; it will be easier to remove once it's cooked.

Rinse the cauliflower under running water.


Pour 1/3 cup of chicken broth into your cooker and place your trivet inside. A trivet or steamer basket will keep your cauliflower from getting soggy during cooking. If you are using a larger, 8 quart pressure cooker, use at least 1/2 - 1 cup of liquid to help bring your pot to pressure.

I like to use Better Than Bouillon in chicken flavor. It stores well in the fridge and I can make as little or as much broth as needed for my recipes.



Put your washed cauliflower into the cooker. This is a small, 1 pound head. you can use any size you want; this was the smallest one I could find and will give me 2 servings.


Close the cooker lid, close the pressure valve, and select HIGH pressure for 4-5 minutes. Five minutes will give you a softer, cooked texture.

Remove the trivet and use a fork to break off the florets. Stab & twist, and they will easily come off.


Remove the core and discard.


Use a potato masher or immersion blender, right in the pot, to blend your cooked cauliflower. Make it as smooth or as chunky as you like.


This made about 2 cups of mashed cauliflower, perfect for two servings.

Season with salt, pepper, or even add roasted garlic for a wonderful flavor.

Low Carb Mashed Cauliflower - Pressure Cook
Creamy mashed cauliflower is a great low carb alternative for mashed potatoes. So easy to cook a whole head at once, break off the florets and mash, all in one pot! This recipe was tested with a 6 quart pressure cooker. If you are using a larger cooker, increase the liquid to 1/2-1 cups and drain some of the liquid before mashing the cauliflower in the pot.

1. Pour water or broth into the pressure cooker.2. Put the trivet or steamer basket inside.3. Place the washed head of cauliflower on top of trivet.4. Close the pressure cooker & close the pressure valve.5. Select HIGH pressure for 4-5 minutes.6. At the end of cook time, open the pressure valve for a Quick Release.7. Remove the trivet from the pot, keeping the broth in the pot. 8. Using a fork, break off the florets into the pot, removing the core. 9. Use an immersion blender or potato masher to desired consistency, directly in the pot. 10. Serve hot and enjoy!
