I have had crystals form in my concentrated grape juice, which is harmless and strained out prior to drinking. <br />I even checked with my mom (whom I consider a canning expert) and she said to follow the pectin recipe. It could also depend if you used extra~ripe fruit and the added sugar formed the crystals.
