If you are running out of water before the processing time is up, you need to use more water. You are lucky to be at sea level and not have to add extra time to the recipe.<br />As soon as you see a steady stream of steam from the pressure valve,start the processing time. If your float valve doesn't come up,it can be that it's dirty,causing it to stick. It's simple to take apart & clean with a pipe cleaner;be careful not to lose these small pieces during cleaning!<br />I think you'll be fine, as long as the water is at the trivet level. You can add a 1/2 cup more water for insurance. I don't think there will be that much water loss if you begin the process time as soon as you see the full steam from the pressure valve. I did the test and I was only able to keep water in my instant pot for 27-28 minutes, when it boiled dry, instead of the 35 minutes. I wasn’t able to get the float valve in there very much so there might have been more steam loss than if the float valve was in place? I am also nearly at sea level though so I don’t need to process for very long (I’m mostly thinking of making jams), is it okay for me to can using my instant pot even if it “failed” the test?
