When you can your own, they will split, but will work great with a chili. You will have to can the chili and the beans separately.

I thought I paid $2.25/lb for the meat, but I clicked on the photo and it was $2.45/lb. A good deal, considering that it was trimmed and pretty lean prior to packaging. You may find better deals, but more fat in the meat.Frieda Loves Breadhttps://www.blogger.com/profile/00265482581165683185noreply@blogger.comtag:blogger.com,1999:blog-3272761941682835961.post-19691940116706993802010-10-25T15:15:04.977-07:002010-10-25T15:15:04.977-07:00Freida, have you ever tried canning dry beans? I've been thinking more and more about putting up more food, so it's so interesting to see what really can be done with canning. I can't peruse as much as I'd like at the moment, but you can be sure I'll be back to read through all of your canning posts!

Thanks Frieda - you're a cooking wiz!Kellyhttps://www.blogger.com/profile/03341825553830122060noreply@blogger.comtag:blogger.com,1999:blog-3272761941682835961.post-4814343124335290422010-05-02T21:38:48.340-07:002010-05-02T21:38:48.340-07:00Canning venison would be a great idea!
This is ...Canning venison would be a great idea!

This is what my Blue Ball Canning bible says: The flavor and texture of canned meats depend upon the breed, feed and manner of handling the meat at the time of slaughter, and immediately after slaughtering. If you slaughter your own meat, contact your county Cooperative Extension SErvice for info on slaughtering, chilling and aging the meat.

Do not let meat stand in water. However, strong-flavored game should be soaked in salt water before canning. Soak game 1 hr. in a salt brine (1 T. salt for each qt. of water).Frieda Loves Breadhttps://www.blogger.com/profile/00265482581165683185noreply@blogger.comtag:blogger.com,1999:blog-3272761941682835961.post-39679261048416457152010-05-02T17:04:31.302-07:002010-05-02T17:04:31.302-07:00My mom pressure canned venison while I was young a...My mom pressure canned venison while I was young and it was good - seemed to loose its "wild" taste after being canned. I really should get her to do this with me with our next deer Grumpy gets! I always have been afraid of the pressure cooker but you make it seem so easy!Shelbyhttps://www.blogger.com/profile/11068638453383917637noreply@blogger.comtag:blogger.com,1999:blog-3272761941682835961.post-91573248397777029082010-04-28T15:13:25.345-07:002010-04-28T15:13:25.345-07:00Fantastic tutorial. Just think, your own "store" of veggies in the pantry ~

The meat will keep 3 years in a dry, cool place. Nope, it does NOT need to be cooked. That's another great thing about it...it's ready to eat. Cuts down on cooking time. I'll be posting a recipe with it next~Frieda Loves Breadhttps://www.blogger.com/profile/00265482581165683185noreply@blogger.comtag:blogger.com,1999:blog-3272761941682835961.post-16376041056089185472010-04-28T12:31:33.954-07:002010-04-28T12:31:33.954-07:00Wow. Right now we don't eat tons of meat, and it's just the two of us, and we don't have a lot of need to make things in bulk. But I kind of wish we did. :)

How long does the meat keep? Does it need to be cooked at all when it comes out of the jar?Nikki Moorehttps://www.blogger.com/profile/12991234600129059209noreply@blogger.com
