7 Cinco de Mayo! and Awards!

Hooray for Cinco de Mayo! My family just LOVES Mexican food, and I am here to share my faves...

Chips and Salsa...so easy and so fast! Just dump and blend!

Chicken Enchiladas, Ole!

I have tried both red and white sauces....

my family prefers the red sauce. It is NOT hard to make...

throw it in a blender and thicken....so good!

Here is the rice....Spanish rice...Mexican rice...I'm not sure which is politically correct.

Spanish Rice (4x6 printable recipe) (full page recipe)

Doesn't matter, it tastes great! I believe rice should be simple and not detract from the main course. Therefore, no chunks of pepper, corn, or all that pizzazz for me!

Or, you can make tacquitos. These are baked and are great as an appetizer or main dish.

If you want a fast and easy all-in-one dish, you can make either

Mexican Cornbread casserole or

Taco Delight.

What are YOU gonna make?

Scate Bakes sent an award my way... The Premio MEME Award...Thank you!!!

What is a MEME?
  • An idea that, like a gene, can replicate and evolve.
  • A unit of cultural information that represents a basic idea that can be transferred from one individual to another, and subjected to mutation, crossover and adaptation.
  • A cultural unit (an idea or value or pattern of behavior) that is passed from one generation to another by nongenetic means (as by imitation); "memes are the cultural counterpart of genes".

  • Here are the Rules:
    1. list 7 personality traits
    2. tag/award 7 blogs that deserve such fine recognition for the personalities that they share with the blogging world.

Loyal: I have a small circle of family and friends that I rely on and hope they can rely on me!
Independent: I have learned that I can do almost anything, even if it's not perfect.
Musical: Even though I am hearing impaired, I have learned to play the piano.
Stubborn: This can go both ways! I keep trying until I get something right.
Creative: Art, cooking and now photography. This blog serves as a great outlet.
