6 Bahama Mama Tortilla Soup Copycat

It is still cold in these here parts...cold enough for soup.  I have loved the soup over at Rhumbi's for years.  Then one day, it tasted different.  Not bad, but different.  After asking management what changed, this was their answer, "We changed suppliers."





This is a brothy, full of flavor soup filled with grilled chicken, tomatoes, onions, with just a hint of coconut milk and exotic spices.  Well, not quite exotic.  An added surprise of stringy, gooey, mozzarella cheese is found on the bottom of the soup and is paired well with the crunchiness of baked/fried tortilla strips.

This recipe uses fresh ginger (check my fabulous tip here) and baked tortilla strips (use the baked taco shells tip here).  My garlic is always frozen as a head and I just break off what I need...peels really easily ~

After the soup is made, place about 1/4 c. of mozzarella cheese into a soup bowl.  Unless you're one of my boys, say more like 1 heaping cup....






ladle the hot soup on top of the cheese








and top with tortilla strips.  You can garnish this with cilantro, if you like ~


There, now you've got your own taste of the South Pacific.  Yum!

  1. Sounds delicious! And thanks for the fresh ginger tip! I love cooking with fresh ginger but stopped keeping it in the house because I hated throwing it away when it went bad . . . I will totally try freezing it!

    1. You can find the recipe at the bottom of the post next to my signature. There are two options to print: 4x6 recipe card or the full page recipe with one picture. I agree, it would take too much ink to copy this post page!
