4 Peanut Butter Oatmeal Bars


I got this recipe from my roommate way back in my college days.  I couldn't believe that it has be twenty mfmmflpt years since I've had these.  I couldn't remember how to describe these ~ it has been so long!  All I remember is that they were REALLY good ~ good enough to write down the recipe.

Now, I can tell you that these are a thick bar cookie, really peanut-y, with just a little bit of texture from the rolled oats and covered with the BEST peanut butter frosting that will ever cross your lips ...

This batter comes together very quickly, and spreads easily into a 9x13 baking pan. 

The recipe doesn't say how many chocolate chips to "sprinkle on top."  I guessed one cup.   I used Guittard's milk chocolate chips on top.  I really don't like the HUGE size of these chips.  I would prefer a smaller chocolate chip....

I'm sure these could be mixed in with the batter instead of being pressed on top, don't you think?


While baking, I checked the recipe for the next step.  It said to "frost the peanut butter bars when out of the oven with a little bit of powdered sugar, a little bit of peanut butter and some milk."

Huh??

I shook my head in disbelief.  I couldn't believe that I wrote that part of the recipe with NO MEASUREMENTS ....  yikes.

Well, I gotta warn ya.  This peanut butter frosting is to die for.  I mean it.  I couldn't stop sampling it.  It's so good, it deserves a post all by itself.  It almost didn't make it onto the peanut butter bars ...

Look how smoothly it spreads on top of the hot peanut butter bars ...


... and sets into a really cool looking glaze on top.
