I love to read Susan's blog. She has actually entered in the Pillsbury Bake-off and made these yummy looking cookie-dough cupcakes. She caters to weddings and makes these darling custom made sugar cookies. She is currently participating in a $100 food challenge where her goal is to only spend $100 on food (that includes eating out, folks!) for her family of 3 for the month of July. By golly, I think she's gonna make it!
In my neighborhood, there is a shortbread cookie factory. They make all kinds of shortbread cookies: vanilla, chocolate, strawberry, lemon, chocolate chip, and my favorite....spice with powdered sugar. I worked there while I was in high school. I would come home smelling like cookies...
This is a crispy cookie that is highly addictive...
My copycat recipe uses a cake mix.
That's right! Use your favorite spice cake mix, add shortening, and an egg.
Use a small 1 T. cookie scoop and flatten with the bottom of a drinking glass.
You have to toss them in powdered sugar to complete this decadent goodness.
Just one bite is all it takes....
and before you know it, you've eaten them all!
1 Spice cake mix (my favorite is Betty Crocker)
¾ c. shortening1 egg
Combine all ingredients, mixing well.
Using a 1 T. cookie scoop, place 2” apart on an ungreased cookie sheet.
Bake in a 350° oven for 11-12 minutes.
Cool on cookie sheet for 10 minutes.
