7 No Knead Bread, Revisited


Have you made No Knead Bread yet?

If not, now is the perfect time during your busy holidays.

I made this for the first time and posted it almost two years ago....where has the time gone?

This is a very EASY bread to mix up.

A little more challenging to shape, as it is a very, wet sticky dough.  Use lots and lots and lots of flour on your hands and counter...

Make sure you flour the towel your bread will rest in while its rising.

Did I say use lots of flour?  

Yeah.  This is what happens when you don't.


I had a devil of a time getting this out of my dutch oven, but the bread was still edible ~

A very airy, moist loaf with a crunchy, crispy crust.

You don't even have to use a dutch oven to bake this....

A glass Pyrex dish with a lid will do.....

or


If you have a removable liner in your crock pot, slow cooker or whatever you call it, use it for this bread!

Make sure you have a glass lid, though.

No plastic lids or plastic knobs are allowed.






I liked this size much better than the one stuck to my dutch oven.

This one is about 8.5" across and 3.5" high.

Perfect!

  1. I never thought to use my crock pot liner. Ihave the same one as you show n your picture but mine is green. GREAT IDEA. I know you posted a few posts ago about your problem with your recipe archives. I still can't find the recipe for your Sullivan No-Knead Bread. Is there a way to access it now? Thanks. I have been using ABinFive but would love to try Sullivans.

  2. Ok, when you say "You cover this baby and put it to bed. Overnight. For 12-18 hours. " do you mean in the fridge, or on the counter?

  6. Okay, you must have been reading my mind because I've totally been wanting to make fresh bread but hate kneading. I don't know why...whether it's intimidating or messy...or both. I'm definitely going to try this!!

    Oh, and such good tips! I'll be using my inside of my crockpot!

    When I make this bread, I use 1 cup water, 1/2 cup beer, and 1 Tbsp vinegar for the liquid. Then to make things easier, after the dough has risen overnight, I turn it out and fold it over a few times, just to work a tiny bit of flour into it. Then I put a piece of parchment across a small skillet, 8" or so, so it sticks past both sides about 4". I spray the parchment and sprinkle with corn meal, and put my dough onto the parchment, and cover, to let rise. My skillet is just the right size that when I put the dough in, the parchment hanging over the sides kind of turns up vertical. This helps hold my towel off the dough while it's rising. When it's done rising, I just put a couple of slits in the top, and use the parchment as a sling to put it into my dutch oven, parchment and all. It's easier to get the dough in there nice, and safer too, around that hot pot.
