3 Funeral Casserole: Ultimate Comfort Food

It was two years ago that my sweet mother in law passed away.  She was diagnosed with ALS and died two and a half months later.  It was two years ago that I savored this casserole; hot chunks of potatoes swimming in cheesy goodness and topped with crunchy, crushed cornflakes.  One bite, feeling the warmth of the potatoes going down my throat, was just what I needed at that time. 

If you are from Utah, you may recognize this as a traditional funeral casserole, also known as a "Cheesy Potato Casserole."   I am sure there are many versions out there.  You can use two pounds of any form of potato, fresh or frozen: cubed or hashbrown style.  I chose to try two of my bottled/canned Yukon Gold potatoes.   A quick rinse was all I needed to get started...





While the potatoes were draining, I put some melted butter in the bottom of a 9x13 pan.




Mixed up the cream of chicken, sour cream, onion powder, cheddar cheese...

and salt.  I love Real Salt.  It's the good stuff!




In go the potatoes and everything is stirred till coated...




Spread into the buttered pan,




and covered with crushed cornflakes.

Baked for about 25 minutes (frozen or uncooked potatoes will take slightly longer) till bubbly...




This is the ultimate comfort food....don't forget the ham!

  2. This is the ultimate comfort food. I lost 2 very good female friends to ALS several years ago and I have two male friends currently battling it. It is a sad horrible disease. So sorry about your MIL. I wish I had some of this casserole right now.
