14 The Secret to Fluffy Rice

Ever wondered how to make light, fluffy rice?
Now you can.  All you need to do is rinse your rice in cool water.

Strain your rice through a colander or sieve.
Do this 2-3 times or until the water is fairly clear.  I watched several Japanese students do this and always thought, "But the rice isn't dirty..."
The rice ISN'T dirty.  It's full of starch.  Rinsing it removes the starch that causes the rice to be sticky.

Cool, huh?

  1. Very cool. I've read this, and I've been too lazy to take the time to do this. Then, my rice turns out gummy. I surrender. You're right. I want fluffy rice! Thanks for finally talking me into taking a few extra minutes for perfect rice. I'll let you know how it turn sout.

  2. Yep, I do this. Here in Costa Rica, this is how I was taught to make rice. Toasting the rice it in a couple T. of oil (with the onions and spices)before boiling also helps to keep the rice grains separated after cooking.

  3. Jelli Bean, thanks for the toasting tip. I forgot that this is what I need to do with my Mexican rice. Toasting really does enhance the spices of your dish ~

  7. Hey Frieda...it looks like you have some posts on canning. Wondering if you can answer a question for me. I made a whole slew of apricot jam this past summer. Now when ever we open a jar there is a layer of sugar crytals at the bottom....any ideas on why this could have happened?

  8. Jamie, I am fairly new to canning. I have had crystals form in my concentrated grape juice, which is harmless and strained out prior to drinking.
    I even checked with my mom (whom I consider a canning expert) and she said to follow the pectin recipe. It could also depend if you used extra~ripe fruit and the added sugar formed the crystals. Check this site for more info: http://www.pickyourown.org/FAQ_jamsandjellies.php Good luck!

  11. Great tip! Of all things, I can't ever get rice right! But, I usually make brown rice, not white. Do you think the rinse technique works just the same for brown rice?

  12. Kelli, Yes, this tip would work for brown rice to reduce the stickiness ~ give it a try and report back...I cook brown rice, but don't rinse it because my hubby likes it "Japanese" style=sticky!
