17 Chicken Tacos & El Paso Taco Seasoning

Love Mexican food?  We do!  Love tacos?  We do!  Want to win this taco gift pack?  I'm sure you do!  Psst....Come closer....

The great folks from Old El Paso through MyBlogSpark have provided me with these cute dishes, seasoning packet, and gift card to create my very own family taco night!

Here's how I made my chicken tacos:

Melted butter, added fresh minced garlic, orange juice and some Old El Paso Taco seasoning mix.
Added Worcestershire sauce, boneless skinless chicken breast and cooked, turning chicken once.
Made sure chicken was at least 160°F by using an instant read thermometer and took them out.
Reduced the sauce by half and added mustard.
While the sauce was reducing, I had my hubby help me shred the chicken with two forks.  
Put the shredded chicken back into the sauce and gave it a stir.
I love this mild, flavored chicken with a hint of citrus from the orange juice.  If you prefer it with more spice, add more of the taco seasoning.

This chicken was put into warm, homemade flour tortillas and topped with shredded cheese, diced tomatoes, avocado, sour cream and shredded lettuce ~ just the way we like them!

3 General Mills Reduces Sugar in Kid's Cereals


I read this headline in my local newspaper and was happy to hear that General Mills is committed to further reducing sugar in cereals advertised to kids under 12 to single digit grams of sugar per serving.  They have already been reducing sugar in cereals while increasing key nutrients, such as calcium and vitamin D, and providing whole grains.

Breakfast really is the most important meal of the day.  If you skip breakfast, you are more likely to 'make up' your caloric intake in your other meals and even possibly snacking late at night.  Studies have shown that kids who eat breakfast perform better at school.


I grew up on Wheaties and Cheerios.  I always chose Cheerios.  Once in a great while, on camping trips, we would dine on Lucky Charms mixed in with peanuts, and M&M's as a trail mix.  Yum!  A handful of cereal makes a great snack ~

My youngest son has inherited my sweet tooth.  Candy and sweets were part of his diet, and yes, cereal was a part of that.  When he turned 16, he made a 180 degree turnaround and banned himself from most sugars, sweets, and even soda.  He even read the nutritional labels of cereals and chose those low in sugar.

Over the past year, he has lost 40 pounds and gained an 1 1/2" in height.  He traded in his PS3, Wii, and games in for a weight bench and punching bag setup.  He looks, feels better, and has more energy than ever before.

I was even more excited to find out through MyBlogSpark and General Mills that I would receive free cereal coupons to help my family come together at the breakfast table and dial down our sugar acuity.  Thank you!

I used the coupons to get the following cereals:  Lucky Charms, Honey Nut Cheerios, Reeses Peanut Butter Puffs and Cinnamon Toast Crunch.

1 Pillsbury Crescent (Turkey) Bacon & Cheese...Bundles?


My readers voted that I add my own spin to the Pillsbury Crescent Bacon and Cheese Tarlets.  I thought for a long time what I could do to change it up and still leave the bacon and cheese in the recipe.

The original recipe is very much like a quiche and all I could think of is, "What do I like with bacon and cheese?"



I love a good turkey club sandwich with bacon, so this is what I came up with:

1 T. butter, melted
1 T. chopped onion
1 t. dijon mustard
2 oz. cream cheese, softened
1/2 c. mozzarella cheese
1/4 c. cooked, chopped bacon
1/2 c. cooked, chopped turkey
1 pkg. Pillsbury Crescent rolls, rolled out into a 9"x12" rectangle and cut into 3" squares.

Since not everyone has a 'tartlet' pan, I opted to make these into 'bundles.'

I mixed everything up, put a Tablespoon of the mixture in the middle of the crescent dough square, and folded each corner up to the middle.

Put the bundles on a baking sheet, baked them in a 375º oven for 12-15 minutes.

The result?

Really rich.  We had forgotten how buttery these crescent rolls could be. 

My boys said they were good appetizers, but they wouldn't want it for a meal.


As for me, I thought they could use a little less mustard.  Perhaps a different type of cheese.  Good, but not WOW ~
